MUNJEBEL® ROSSO CD, CONTRADA CALDERARA SOTTANA
Since the day we started producing wines back in 2001 the grapes from this contrada were always a bit more expensive than other areas and the reputation has always been high. In cold and difficult vintages the structure of the soil with many smaller rocks, can give an advantage in absorbing warmth and radiating this during the colder evening hours. The wines are generally more feminine combining elegance and in the best cases the wines are profound.

Vinification: Destemming and light crushing of the grapes
Fermentation: starting with a “pied-de-cuve” using only indigenous yeasts and skin contact for about 60 days
Aging: In neutral epoxy tanks from 1500 liters to 2500 liters for 18 months and another 18 months in bottle
Fining: No
Filtering: Before bottling with PP cartridges of 5 micron
Sulphur: values can vary from 15 to 50 mg/l., added or not, depending on the quality of grapes and stability of the wine.
